Curcumin is a natural phenolic antioxidant extracted from the roots of turmeric, zedoary, mustard, curry, turmeric, or other turmeric plants. It is commonly used as a food coloring. Curcumin is non-toxic and has many pharmacological effects, such as choleric, anti-infection, paralytic contraction of the uterus, lowering blood cholesterol, antiviral, antibacterial, antioxidant (stronger than α-tocopherol), anticoagulant, lowering blood lipid, and anti-atherosclerosis.
